Our new chilli cheese is now available, it is infused with Bhut Jolokia (worlds hottest) and is blisteringly hot.

A stunning cheese infused with the Bhut Jolokia chilli the hottest chilli in the world. Don’t be fooled by other chilli cheeses, this cheese is explosive, you might find the odd chilli cheese with some heat i know one supermarket brand does a Mexican style cheese, all i can say is this cheese is 10 times hotter! This is quite simply in my opinion the hottest cheese in the world.

This cheese will last for up to two moths well wrapped in the fridge and would be a great talking point for sure, if you want the ultimate cheese dining experience try some of this cheese with our fire onions!

This cheese is a web based product and not available at our shows and events, so if you like the hottest of hot this is the one, are you man enough!

We are pleased to announce that our new fire chilli cheese will be available very soon, there will be two types hot and mild, the mild one being with Jals and the hot one being a mixture of hot chillis.

We have just made our chilli fire onions hotter, so hot infact that they now come with there own plastic fork!

If you love pickled onions and chilli, do we have a teat for you, infused with 6.4 million chilli extract, we have to wear gloves and masks to make these!!! (US police pepper spray is 5.5 million units)

I just cannot put into words just how much these onions bite back, they are great as a snack, or added to a meal, why not make the best cheese and onion sandwich you’ll ever have. Failing all of that just give them to your worst enemy :) So hot they hurt!!

The fire onions now come with there own plastic fork, please use the fork provided and not your fingers, we will not accept responsibility for any dangers caused.

Chilli Mango Chutney recipe

4 Mango slightly under-ripe (about 1.5 kg)
350 g brown Sugar
1/2 teaspoon cumin seeds
1 teaspoons coriander seeds
1/2 teaspoon cardamom
1 teaspoon red pepper
1/2 teaspoon turmeric
11/2 teaspoon Ginger paste
1/2 teaspoon Clove
400 ml Vinegar
2 teaspoon Garlic paste
1 finely chopped Onion
Peel the mango with knife
Evenly sprinkle the sugar over mango and leave for 6-12 hours

in a cool place

Heat the pan. Roast the cumin, coriander and cardamom.
Add everything else and bring to simmer for about 2-3 hours

on low heat

stirring from time to time,

Wait until the mango has become translucent and the liquid

has almost

evaporated, leaving behind a thick syrup.

Remove from heat.

Vindaloo Recipe

  • 2 skinless chicken breasts
  • 1 medium onion
  • 3 tbsp groundnut oil
  • 1″ thumb ginger
  • 3 cloves garlic
  • 1 tsp mustard seeds
  • ½ tsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp fenugreek seeds (optional)
  • ¾ tsp salt
  • 1 tbsp red wine vinegar
  • 6 hot chillis (you can buy the chillis from any supermarket)
  • 1 tomato
  • 25g fresh coriander (small bunch)
  • 125 ml water

Chop the chicken breasts into roughly 1 to 2″ cube

Peel and roughly chop the onion. Get 2 tablespoons of the oil good and hot in a frying pan over a high heat and fry the onions until they go properly brown. They provide the unusual colour and flavour; you are looking to almost burn them they should be that brown. Once they are browned drain them of any excess oil and put them to one side.

Peel and roughly chop the garlic and ginger. Roughly chop the chillis (seeds and all) and the tomato. Put the caramelised onions, garlic, ginger, chillis, tomato, mustard seeds, coriander seeds, cumin seeds, fenugreek seeds (you can leave these out if you can’t find them), salt and red wine vinegar in a blender and whizz them up until you have a thick but smooth paste.

Put the diced chicken in a non-metallic bowl and thoroughly coat it in the paste. Leave it for a minimum of 30 minutes (and upto 4 hours).

When you’re ready to cook get the remainder of the oil hot over a medium heat in a wide pan. Put the chicken and all the marinade in the pan and stir fry for a few minutes.

Add enough water to make a thick gravy and turn the heat right down. Leave to cook for approximately 15 minutes.

Finally, finely chop the fresh coriander and put it in the pan. Turn the heat up fiercely for another 1 or two minutes to drive off any excess liquid and wilt the coriander leaves and then serve.

Here is a sneak preview of what we have been up to over the last few months, we have re-branded our products to keep in with our funky style. All of our new jars have a black body red lid and funky bright yellow labels. The sauce bottles are arriving next week but will be just as cool.

The Lakes Chilli Fest at Levens Hall

The 3nd Lakes Chilli Fest will be held on the 14th & 15th August 2010.

At Chillifest 2010, there were more stalls than before featuring a wide range of chilli-related items such as jams, jellies, chocolate, ice-cream, sauces, seeds, powders, chutneys, clothing, plants, breads etc. Visitors were able to sample foods from the Caribbean, Mexico, and India as well as many renowned products from Cumbria, some of whom are ‘going hot’ for the occasion. There were also stalls selling the newly brewed Levens Hall Ancient Orchard Cider, Cowmire Damson Gin, and Pimms.
