Times are hard folks and if you believe all you read, getting harder. So how can we keep our family healthy if we go on a budget for our food; simple follow my recipes and you can not go wrong.
Budget or store cupboard meals do not mean egg and chips every day of the week.
Not that there is anything wrong with egg and chips, add a couple of sausages some beans and a hunk of decent bread, and you have a great meal, that will stave of any hunger pangs you may have.
But maybe just maybe we can do a bit more for our families, at this time of year vegetables are fairly inexpensive. Have you thought of growing your own, you will not be self sufficient, unless you have hundreds of acres of spare land. But place a few grow bags on you¡¯ patio and you could have tomatoes lettuce, and numerous other salad crops growing away very quickly.
Enough of me waffling on, you are here for a few ideas on cheap meals, and I am about to serve you up with some.
This recipe is a nice quick and easy way to get some good food into those hungry hordes.
Cheesy baked Tortillas
1 tablespoon Olive Oil – plus a bit extra for greasing
1 Onion – finely chopped
1 Red Pepper – de-seeded and chopped
1 large can Chopped Tomatoes
1 large can Mixed Beans in Mild Chilli Sauce
1 large can Red Kidney Beans in Water – drained and rinsed
1/4 lb Reduced-fat grown Mature Cheddar
8 Garlic & Coriander Tortilla Wraps
Black Pepper – optional
Preheat oven to 190 C / Gas 5. Lightly oil a large ovenproof dish.
Heat the oil in a frying pan and fry the onion and pepper for 5 minutes until softened,
Stirring occasionally. Add the tomatoes and beans to the pan, season with black pepper and heat through for 5 minutes stirring the mix lightly.
Divide half the cheese between each tortilla, then add the tomato and bean mixture, equal amounts between each tortilla, dish up with a green salad Walla they will love it folks. This will easily feed four family members, and if you are careful where you shop will cost you under five pounds.
This next meal is a particular favorite of mine, and I am sure you will enjoy it just as much as myself.
1 tablespoon olive oil
1 onion, finely chopped
1/4 lb mushrooms, sliced
1 1/2 teaspoons of hot chilli powder
1 teaspoon cumin
1 teaspoon of dried mixed herbs
Large can of chopped tomatoes
Small can of tuna, drained
Large can of red kidney beans, drained
Small can sweetcorn drained
Salt & ground black pepper
2 bags boil in the bag rice, brown rice if you can get it.
Heat the oil in a large saucepan and gently cook the onion and mushrooms for 4 minutes.
Stir in the chili powder, cumin and herbs and then add the chopped tomatoes, tuna, red kidney beans, sweetcorn and seasoning.
Bring to the boil and simmer for 20 minutes
Meanwhile cook the rice according to the packet instructions.
That's it done dish it up, and enjoy another meal for less than a fiver. There is enough here to feed four people.
