Chilli chutney recipe

This is a very simple and easy chilli chutney recipe that you can make at home.

      4 Medium Tomatoes
      2 Small Red Onions, Chopped Finely
      2 Cloves Garlic, Crushe
      4 Teaspoons Grated Root Ginger
      1/2 Cup Lime Juice
      4 Tablespoons Brown Sugar
      4 Chillies, Chopped Finely, you can buy these at your local super market, or you might be growing your own!
      Preheat oven to hot. Halve Tomatoes and place cut side up on a lightly oiled oven tray. Roast for around 30 minutes, allow to cool slightly and then roughly chop.
      In a medium saucepan combine all the ingredients, stirring over a low heat until the sugar dissolves, bring to the boil and then reduce heat and simmer (uncovered) for around 40 minutes or until thickened.
