Delicious Prawn Curry

Curry is one of the world’s most well known meals, and not without good reason. The sheer selection of factors you can add and the flavours you can create, for me its food of the gods and one of the most fantastic meals you can have. Here is another good curry recipe. However this time it is a personalized favourite of mine. Top top secret tasty prawn curry.

Elements:

*2tbsp turmeric
*one tbsp cumin
*handful torn coriander
*juice and zest of one lemon
*700g king prawns, deshelled
*4 green chillis – add more for your pallet
*5cm fresh ginger
*2 garlic cloves
*one onion
*2tsp oil
*one tin chopped tomatoes
*one tsp ground nutmeg
*2 tbsp curry leaves.

How to make it:

1/ Add your turmeric, cumin and in a bowl. Finely chop your ginger and garlic and add it. Insert a small amount of water and grind into a paste, it helps if you have a pestle and mortar.

2. Finely chop and fry your onion. Stir on your paste after the onion has softened  for one minute ahead of adding your tomatoes. Fill the tomato tin with water and add ahead of adding your lemon zest and juice and your curry leaves.

3/ Sprinkle your nutmeg into the mix and simmer on a very low heat for forty five minutes to an hour until the sauce has thickened and minimized and you are still left with a fantastic fragrant prawn curry. Garnish with your fresh coriander and provide in warm bowls.
