Don’t forget that you can freeze your chillis if you have a large excess left over. One clever way is to blitz your chillis in a blender add a little bit of water and then pour into ice cube trays, gthen when you want to add some heat to a dish just pop a ice cube out as and when needed. You can also use this method with herbs.
If your lazy like me, just place your chilli pods into a bag and place in the freezer, ive had some in now for 12 months and there fine to use as and when. Don’t forget to save the seeds you need for next year as frozen seeds will not germinate.
