Veg chilli corn
1 cup – Soy mince
1 No – Onion chopped
1 No – Pepper chopped
2 tbsp – Oil
¼ tsp – Chilli powder
Salt to taste
Heat oil in a saucepan, sauté onion and peppers till soft.
Add soy mince, salt and chilli powder. Cook for about 2-3 minutes.
Then add in spaghetti or rice. Serve.
Few toast slices
1 cup – Cheese
1 No – Spring onion finely chopped
½ tsp – Garlic grated
¼ tsp – Oregano
Mix all the ingredients.
Spoon them on the toast. Bake and serve.
Dry Fruit rice
2 tbsp – Butter
1 cup – Rice
½ No – Cinnamon stick
3 tbsp – Raisins
3 tbsp – Cashew nuts sliced finely
3 tbsp – Almonds sliced finely
3 tbsp – Walnuts
¼ tsp – Saffron
1/8 tsp – Sugar
Salt to taste
Pinch of cardamom
Pinch of nutmeg
Dissolve the sugar and saffron in 1/8 cup of water.
Melt butter over medium heat and add cinnamon and nuts and cook till colour changes stirring continuously.
As soon as the rice is cooked using a fork separate the rice (otherwise they tend to stick).
Add the cooked rice to the dry fruits with saffron and sugar. Mix well and serve hot.
You can alternatively fry the dry fruits and add the rice and cook till done. Garnish with sugar water and saffron. Mix it in the rice using a fork.
