Spring Green, Chorizo, Chilli and Potato Hash

This is such a quick, tasty and simple dinner that was inspired by a fellow blogger. It was designed to use up some spring greens and ended up being wonderfully filling and delicious.

You need: cubes of cooked potato, chorizo, steamed spring greens, one onion, one chilli, salt and pepper

Fry the onion in oil until softened and add the chorizo. Wait until the paprika soaked oil starts to come out of the chorizo before putting the potato in. Keep stirring until starting to brown and then add the spring greens and chilli. Season with a little salt and pepper before digging in!

Brilliant, quick and simple. A perfect mid week meal.
